Weekly Menu


I am not a big Salmon fan but found a great recipe and that I want to try.  I hope it taste as great as it sounds. I am also making a chicken recipe that comes highly recommended from a friend.   I am looking forward to this weeks menu.

Sunday: Pineapple and Chicken Quesadilla
Tuesday: Leftovers
Wednesday: Savory Salmon
Thursday: Amaretto Chicken
Friday: Bloody Mary Burgers
Saturday: Lemon Chicken with Sauteed Veggies

Dessert: Caramel Apple Cake

Lime Chicken Tacos

I have been cooking out of food we already have since I have not been to the grocery store in a week and came up with this recipe.  It was very pleased with how it turned out.  Ezra loved it which always means it is a keeper!


Ingredients:
1.5 lbs boneless, skinless chicken breast, cubed and seasoned with salt, pepper, and garlic powder
1/4 cup of red wine vinegar
Juice of 1 lime
1 teaspoon white sugar
1/2  teaspoon ground black pepper
1/2  teaspoon salt
3 cloves of garlic, chopped
1 teaspoon dried Italian seasoning
10 (6 inch) flour tortillas
1 tomato diced
lettuce
Monterey Jack shredded cheese
sour cream


Directions:
1.  Saute chicken in a medium saucepan over medium high heat for about 20 minutes. Add vinegar, lime juice, sugar, salt, pepper, garlic and Italian seasoning. Simmer for 5 minutes.


2. Serve lime chicken mixture in tortillas topped with tomato, lettuce, cheese and sour cream.




Note: I was out of Monterey Jack so I used Mozzarella cheese.

Chocolate Sheet Cake


You can't go wrong with chocolate cake and chocolate icing!


Ingredients:
  • FOR THE CAKE:
  • 2 cups Flour
  • 2 cups Sugar
  • ¼ teaspoons Salt
  • 4 Tablespoons (heaping) Cocoa
  • 2 sticks Butter
  • 1 cup Boiling Water
  • ½ cups Buttermilk
  • 2 whole Beaten Eggs
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla

  • FOR FROSTING:
  • ½ cups Finely Chopped Pecans (optional)
  • 1-¾ stick Butter
  • 4 Tablespoons (heaping) Cocoa
  • 6 Tablespoons Milk
  • 1 teaspoon Vanilla
  • 1 pound (minus 1/2 Cup) Powdered Sugar
Directions:
1. In a mixing bowl, combine flour, sugar, and salt.
2. In a saucepan, melt butter. Add cocoa. Stir together.
 Add boiling water, allow mixture to boil for 30 seconds, 
then turn off heat. Pour over flour mixture, and stir lightly
to cool.
3. In a measuring cup, pour the buttermilk and add 
beaten eggs, baking soda,  and vanilla. Stir buttermilk
mixture into butter/chocolate mixture. Pour into sheet 
cake pan and bake at 350-degrees for 20 minutes.
4. While cake is baking, make the icing. Chop pecans 
finely. Melt butter in a saucepan. Add cocoa, stir to 
combine, then turn off heat. Add the milk, vanilla, 
and powdered sugar. Stir together. Add the pecans, 
stir together, and pour over warm cake.

Cream Cheese Hot Dogs


I wanted something different with hot dogs since they were BOGO at Publix.    I am so glad I came across this recipe.  It was delicious!

Hot Dogs Tin Sign

Ingredients

  • 1/4 cup butter
  • 1 sweet onion, thinly sliced
  • 1 (4 ounce) package cream cheese
  • Hot dogs, or your favorite sausages
  • Hot dog buns
  • mustard
  • ketchup (optional)

  • Directions
  1. Preheat oven at 350. 
  2. Melt butter in a skillet over medium heat. Add onions, and cook slowly until the onions have softened and turned deep brown, about 15 minutes. Warm the cream cheese over low heat in a small skillet until very soft.
  3. Season hot dogs with salt, pepper and garlic powder. Heat in oven until well browned.
  4. To assemble cheese dogs, spread warm cream cheese on toasted hot dog bun, add hot dog or sausage, top with onions, mustard and ketchup, if desired.
