Stuffed Shells




  • Ingredients:
  • 6 ounces of  jumbo pasta shells
  • 1 egg, beaten
  • 1 (32 ounce) container ricotta cheese
  • 4 cups shredded mozzarella cheese, divided
  • 8 ounces grated Parmesan cheese, divided
  • 1 tablespoon dried parsley
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 (28 ounce) jar pasta sauce
  • 8 ounces sliced fresh mushrooms

  • Directions:
  1. Preheat oven to 350 degrees F.
  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  3. In a large bowl, mix eggs, ricotta, half the mozzarella, half the Parmesan, parsley, salt and pepper until well combined. Stuff cooked shells with ricotta mixture and place in a 9x13 inch baking dish.
  4. In a medium bowl, stir together pasta sauce, mushrooms and reserved mozzarella and Parmesan. Pour over stuffed shells.
  5. Bake in preheated oven 45 to 60 minutes, until edges are bubbly and shells are slightly set.

Weekly Menu


I have been extremely busy the past couple of weeks and have been slacking on the blog.  This week I plan to get back on it and share some great recipes. I am really looking forward to this weeks menu. I LOVE Bang Bang Shrimp from Bonefish and have been craving it so I decided I was going to make it.  I can't wait!!!

Sunday: Chicken with Wine Sauce and Eggplant
Monday: BBQ Ribs and Corn on the Cob
Tuesday: Stuffed Shells
Wednesday: Bang Bang Shrimp with Salad
Thursday: Cider Sauced Chicken Breast with Sweet Potato
Friday: Slow Cooked Chicken Caccitorre
Saturday: Poblano Burgers with Black Bean Couscous


Dessert: Jello Orange Sliders

Lemon Chicken

I have been making this recipe for a couple years now and love it.  It is a recipe an old neighbor gave me!  




Ingredients:
3-4 boneless, skinless chicken breast pounded thin
1/4 cup all purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
butter or margarine
1 cup chicken broth
2 small lemons

Directions:
1. Mix four, salt and pepper. Coat chicken with it. Reserve remaining flour mixture. 

2. In skillet over medium heat, in 3 tablespoons hot butter or margarine, cook chicken until lightly browned on both sides.  Add more butter or margarine if necessary.  Once cooked, remove chicken pieces to plate.  

3. Reduce heat to low. Into drippings in skillet, stir reserved flour mixture chicken broth, and juice of half of lemon.  Stir to loosen brown bits.  Return chicken to skillet. Thinly slice remaining lemon; top chicken with lemon slices.  Cover and simmer 5 minutes or until chicken is fork-tender.  Garnish with parsley and serve.

Weekly Menu


I am not a big Salmon fan but found a great recipe and that I want to try.  I hope it taste as great as it sounds. I am also making a chicken recipe that comes highly recommended from a friend.   I am looking forward to this weeks menu.
